Buckwheat Flour & Potato Gnocchi 

Ladies and gentlemen here’s another delicious simple recipe for you to create…

…you’ll soon be making your own gnocchi at a speedy efficient rate!

 Ingredients

  • Some peeled and diced chopped potatoes
  • 1 cup of Buckwheat Flour 

Steam potatoes until soft enough to mash through…  

Then use a fork, masher or ricer to soften – don’t use a blender whatever you do! Here’s the final result fluffy, silky and smooth:  
You can add any seasonings at this point if you’re in a real culinary groove 😉  

Then measure out one cup of buckwheat flour ready to pour…  

…into your mixing bowl and make a hole in the centre for…   

…your fluffy potato, add to the centre in a ball……and knead the flour into the potato here’s what it should look like in all…  
Roll the dough into little round balls just like so…  

  …and place them in a pan of boiling water, and when they’re ready how will you know?

Because in a minute or two they’ll rise up to the top! And that’s when you take them out so the cooking will stop!

Then serve warm with your favourite sauce, we used tomato as you can see here…    

After this delicious meal you’ll soon be in good cheer!   

Red Pepper & Onion Quinoa Balls

Ladies and Gentlemen these Quinoa Balls are a delicious bite to eat! Round and scrumptious and so beautifully neat!

Ingredients

  • A bowl of cooked quinoa
  • Half an onion diced
  • Half a red pepper diced
  • Salt/pepper to taste
  • Coconut oil for frying 
  • Basil or other seasoning of choice 

Fry your onions and shiny pepper red…

  

…Add and mix with salt, pepper and basil in their fluffy quinoa bed.  

Use your hands to roll a handful of mixture into a neat and round ball…  

…And whilst preparing do your very best not to eat them all! 😊😉Serve with salad and enjoy your round burst of protein!

  

A meal fit for any Quinoa King or Queen! 👑     

Orange Salad Dressing 🍊

Here’s a simple 2 minute Homemade Orange dressing that we made for our salad this afternoon: 

Ingredients:

  • Juice of 1 orange, 
  • 3 tbsps of extra virgin olive oil,
  • Pinch of Maldon salt
  • Orange zest 
  • Ground pepper

Simple, easy and zesty! Free of additives, preservatives and sugar, completely natural and super flavourful!

Why not try with lemon or a grapefruit or even a couple of limes? 

 

Lettuce Salad Wraps 

Ladies and Gentlemen here’s a delicious idea to give your meal a nutritious start…It’s so wonderfully vibrant it is edible art! 

Ingredients

  • Lettuce head with large leaves. We used Batavia, though Cos could work well too.
  • Julienned or thinly sliced salad vegetables.
  • Salt/pepper to taste
  • Cocktail sticks
  • Favourite dip/sauce (optional)

First wash out your leaves and lay them out flat..

  
Then lay salad items in strips…just like that! 

We used julienned, cucumber, carrot, red onion and pepper too. Though you could add any fillings that you wish to.   

Sprinkle a little salt and pepper for extra spice and roll the green leaf up like a wrap, oh it looks so nice!   

We always find piercing a cocktail stick through the middle helps it to stay, so your delicious crunchy centres don’t unfold away.
Voila! There we go our wraps are ready and complete, ready for a delicious healthy bite to eat 👌 
Here’s another tasty tip…Why not serve our lettuce wraps alongside your favourite  sauce or dip?  

Red Pepper Hummus – Sesame Seed Free

Here’s a delicious red pepper hummus recipe, unique indeed because it’s sesame seed free!

 We like our hummus with a texture quite thick, which is why homemade we always pick!

Ingredients

  • 3 cans or cartons of pre-cooked chick peas
  • 1/2 a red pepper
  • 25ml of fresh lemon juice
  • 1/2 teaspoon cumin
  • 3 garlic cloves. 
  • 1 teaspoon black pepper
  • 1/2 teaspoon of salt
  • 1 tablespoons olive oil
  • 120 ml water 
  • 1 teaspoon salt  

Have your chick peas ready to go…  

And measure out your lemon juice ready to flow…

  

…into the jug with your cumin too…

  

And half of a red pepper washed right through.

  

You’ll need to peel and give your garlic cloves a chop…

  

…and into the jug with the oil you pop….

  

All of the ingredients into your blend ready to whir! 

    

And in 30 seconds your hummus is ready to stir!

St George’s Day England Pizza

Happy St George’s Day! We love themed days! Themed days in our kitchen means our minds zoom into sixth gear into creative overdrive to try and find food to theme to the theme! 

Usually our first stop is the cookie cutter drawer where we are usually bound to have something, though to my dismay this morning we couldn’t find any dragons or roses – (now noted on the ever-growing, never-ending ‘to buy’ list. Hands up who has one of those? 😆) 

Second stop, Google. Our when-in-despair-Google-is-there motto resulted in many England flag cupcakes however an alarming shortage in our household of all ingredients sweet and sticky wouldn’t make for an appetising recipe. 

And… So on to stop three: The Fridge. 

 

Perfect. Third time lucky – 30 second eye scan and we knew just what to do! a St George’s Day Pizza coming to you! 

First the base made with coconut flour, tapioca flour,  ground linseed/flaxseed, a drizzle of olive oil, warm water and a pinch of salt. Mixed into a fluffy dough, kneaded and rolled into the pan and baked for 18-20 minutes.

 

And then we stirred together some of our Perfect Pizza Sauce 🍎👌 whilst we were waiting for the base to crisp at the edges. 

For the toppings We sliced some courgette with our Oxo Good Grips Mandoline and sliced some red pepper strips and created: drum roll please…..  

 

Little red England inspired flags! These were placed on top of some chopped curly kale for our base topping to represent the scenic English meadows and Summer country picnics on the grass. 

Now we are sure from our history  learning we rememembed a Prince Orange, and sure enough we confirmed after a short research that William III, King of England was also sovereign Prince of Orange – a loose connection, we know! However enough to excuse some slices of orange on our pizza!  

 

A sprinkle of salt and pepper and into the oven it went until crispy!! 

Et Voila! 20 minutes later – A delicious healthy and plantbased gluten free and organic pizza themed for St George’s Day lunch!

Perfect Pizza Sauce

Ingredients:
1 jar of Dr Organic Tomato Purée
3 cloves minced garlic
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 tablespoon extra virgin olive oil (optional)
sea salt and ground black pepper to taste
1/4 cup of water (alter depending on how thick you like your Tomato sauce)

Finding the perfect sauce recipe for pizza is like finding the perfect jam for scones. It makes a CRUCIAL difference to the overall enjoyment of y(OUR) favourite meal of all time!

This is one that really works for us. It has the fantastic tang of garlic mixed with the Italian vibe of oregano and a little spice of some fresh ground pepper! It’s got it all! And is sure to be a perfect base for your pizza!

GRILLiant Grapefruit

Ingredients:
– Grapefruit
– Maple Syrup (or other sugar/sweetener)
– Cinnamon (or spices of choice)

Preparation Time: 2 minutes
Cooking Time: 12 minutes

Grilling Grapefruit such a delicious treat,
A warm and fruity breakfast that’s sticky and sweet!
Half the grapefruit and place on the grill, then drizzle on syrup (be careful not to spill!)
Sprinkle on cinnamon – or sugar and spice,
And anything else you think would be nice.

Then pop under the grill until the syrup sizzles a lot,
And the fruit is crispy at the edges all lovely and hot.

And voila! Enjoy, your GREATfruit that is sticky and grilled!

ButterBean Beet Burgers

Ingredients:
Organic Butterbeans
Organic Carrots
Organic Beets
Salt and Pepper

Here’s a simple recipe that’s colourful and neat
Ladies and gentleman – let’s turn up the Beet!

Soak Butterbeans over night in a large pot
We use our soak and strain bowl we love it a lot!

Then rinse and wash the beans and slowcook in a pan
Or buy ready cooked organic butter beans if you can.

Mash the butter beans and season as you wish,
And put them aside in a small separate dish.
Do the same with the carrots and beetroot too,
Make sure they’re all seasoned and mashed right through.

We used lemon juice, some pepper and salt from the sea,
You might add some cayenne pepper too if you like it spicy.
Mix the beet, beans and carrots together in a bowl and mix,
Add seasoning then blend, stir, taste and repeat to fix.

Then when your mixture is just right fill up your burger press
Which makes thick burger size portions that won’t look a mess!

It works just like a stamp you fill it at the top
Then turn over and press down and out burgers pop!
Press them down onto a greaseproof paper lined tray
Beautiful Pink Bean Beet and carrot burgers HOORAY!

Then place them in the oven on a medium heat
When they are golden and crisp they are ready to eat!
It usually takes about 30 to 40 minutes to make,
Make sure to flip them half way when you bake.

Vegan Organic Lentil & Potato Curry

Ingredients:

– Organic Green lentils,
– Organic Potatoes
– An Organic Onion
– Biona Organic Coconut Bar
– Water

– Organic Ground Turmeric
– Organic Cumin Seeds
– Organic Crushed chilies
– Organic Cayenne Pepper

– Organic Cucumber
– Organic Sesame Oil
– Organic Plum Tomatoes

Hurry! hurry! Hurry! come and get your curry!
We’ll show you how there’s no need to worry!
Take some potatoes and dice them into pieces
And chop an onion until its roundness deceases.

Then with a little oil put both ingredients into a pan,
And simmer until the onion is all soft as it can.
Then add green lentils, other colours would work too,
Be sure they’ve previously been soaked right through.

Add a bar of coconut cream to a boiling water dish
It helps to melt the bar leave for as long as you wish
Add the cream when melted to the curry pan
fill the pan with water so it’s as level as it can

Then put the cooker on at a low to medium heat
And Cook until the potatoes are soft enough to eat
You’ll need to add your spices at this point too
To perfect taste, keep tasting all the way through!

Here’s something a little different, something a little unique
Have you ever fried cucumbers? It gives them a nice tweak!
We added some sesame oil and some salt and some spice
Fried them until brown and crispy and they were oh so nice!

Then add halved plum tomatoes and the plate is complete!
A yummy delicious meal that’s warm, filling and neat!
