Red Cabbage Tahini Salad Wraps

Ingredients:

  • 1 Red cabbage
  • Lemon & thyme tahini
  • 1 carrot julienned
  • Lettuce leaves
  • Cocktail Sticks
  • Salt & Pepper

Break off whole cabbage leaves, be careful not to tear…

…And wash them throughly ready to prepare. 

Fill with a spoon of tahini and give it a a good spread…

…and fill with lettuce and carrots or other salad vegetables instead.

Now roll into a wrap, secure with a cocktail stick and then your ready to crunch…

Lemon & Thyme Tahini

Ingredients:

  • Sesame Seeds
  • 1 peeled lemon 
  • Thyme (to taste)

Method: Add ingredients to Vitamix (or other high speed processor) and Blend!

We have been absolutely so excited about making our own homemade organic tahini, it’s so difficult to try and find it in the shops here in the UK. Tahini is scarcely available in supermarkets and organic tahini is even more scarce and so we realise,  just like everything else, if you can buy it… you can make it 😉 

We couldn’t believe how simple tahini is to make, it consists literally just of blended sesame seeds, (nothing our trusted Vitamix can’t handle!) and so after a wholefoods delivery of…..

…just a little delivery of sesame seeds😊 We were good to go! 

To make tahini you simply need to blend sesame seeds! Here we go, half the jug full…

  

The mixture can warm up so you’ll need to open the lid, give it a stir and leave it to cool down intermittently.

The first time we made plain tahini we decided it was a little too thick and a little too plain for our liking and that’s how we happened upon this fantastic recipe! 

We added an entire peeled lemon, a good dash of thyme and a splash of mineral water and after Some blending later…

Voila!   


 Oh it tastes so good – you just have to try this – you’re very own of lemon and thyme sesame cream ‘cheese’. 

The lemon smell and creamy texture reminded us very much of lemon buttercream and suddenly – like a lightbulb lightening flash moment  we thought – Why not use our icing tool!? 

Oh swirly swirl… Mmhhmm   

Well I say! Who said salads couldn’t look as pretty as cake 🎂!

Red Pepper & Onion Quinoa Balls

Ladies and Gentlemen these Quinoa Balls are a delicious bite to eat! Round and scrumptious and so beautifully neat!

Ingredients

  • A bowl of cooked quinoa
  • Half an onion diced
  • Half a red pepper diced
  • Salt/pepper to taste
  • Coconut oil for frying 
  • Basil or other seasoning of choice 

Fry your onions and shiny pepper red…

  

…Add and mix with salt, pepper and basil in their fluffy quinoa bed.  

Use your hands to roll a handful of mixture into a neat and round ball…  

…And whilst preparing do your very best not to eat them all! 😊😉Serve with salad and enjoy your round burst of protein!

  

A meal fit for any Quinoa King or Queen! 👑     

Orange Salad Dressing 🍊

Here’s a simple 2 minute Homemade Orange dressing that we made for our salad this afternoon: 

Ingredients:

  • Juice of 1 orange, 
  • 3 tbsps of extra virgin olive oil,
  • Pinch of Maldon salt
  • Orange zest 
  • Ground pepper

Simple, easy and zesty! Free of additives, preservatives and sugar, completely natural and super flavourful!

Why not try with lemon or a grapefruit or even a couple of limes? 

 

Lettuce Salad Wraps 

Ladies and Gentlemen here’s a delicious idea to give your meal a nutritious start…It’s so wonderfully vibrant it is edible art! 

Ingredients

  • Lettuce head with large leaves. We used Batavia, though Cos could work well too.
  • Julienned or thinly sliced salad vegetables.
  • Salt/pepper to taste
  • Cocktail sticks
  • Favourite dip/sauce (optional)

First wash out your leaves and lay them out flat..

  
Then lay salad items in strips…just like that! 

We used julienned, cucumber, carrot, red onion and pepper too. Though you could add any fillings that you wish to.   

Sprinkle a little salt and pepper for extra spice and roll the green leaf up like a wrap, oh it looks so nice!   

We always find piercing a cocktail stick through the middle helps it to stay, so your delicious crunchy centres don’t unfold away.
Voila! There we go our wraps are ready and complete, ready for a delicious healthy bite to eat 👌 
Here’s another tasty tip…Why not serve our lettuce wraps alongside your favourite  sauce or dip?  

Lemon & Wholegrain Mustard Vinaigrette 🍋

Ladies and Gentlemen here for you and for me, is an appetising, simple salad dressing recipe! 

Perfect for when your lunch is in need of some zest and you would like your salad leaves tasting their best!

Ingredients

  • 4 tablespoons extra virgin olive oil 
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon lemon zest 
  • 1 teaspoon of stevia 
  • 1/2 teaspoon of Daylesford Wholegrain Mustard 
  • 1/4 teaspoon to salt 
  • Freshly ground black pepper to taste 

Getting Zesty! With our Oxo Good Grips Zester  

To an empty glass bottle, Add 1/2 tablespoon of lemon zest…

…2 tablespoons of freshly squeezed lemon juice, which we measured into our most convenient  Joie Lemon Juice Reamer …

  

…Add Salt to taste… (And pepper too)

…and 1/2 of Our favourite teaspoon of mustard…Delicious and wonderful consistency it is from the lovely people at Daylesford – we’d love to visit their farm someday…  

Classic, grainy and tangy it’s perfect for our salad dressing and made with only a few simple organic ingredients 

 Olive oil in our recycled glass jar ready to pour out 4 tablespoons…

And your jar should look something like this! Here is all our ingredients layered in our glass jar before shaking! 

Give all the ingredients a good shake and Voila!     
Pour over your salad and store in the fridge (for up to 3 days)… Enjoy!  

Beetroot Coconut Flour Gnocchi 

We used to assume that Gnocchi was always made with potatoes and since converting to a gluten free diet we were determined to find a way to make it without wheat. 

The great thing about making meals homemade is you actually have to learn about what you’re eating! Before we could make gnocchi however we had to learn exactly what it is! 

According to Wikipedia Gnocchi are: “various thick, soft dough dumplings that may be made from semolina,[1] ordinary wheat flour,[2]egg,[3] cheese,[4] potato,[5]breadcrumbs,[6] or similar ingredients” 

Wow, learn something new everyday! We had no idea you could even make gnocchi without potatoes. And so ladies and gentlemen we present to you a recipe for coconut flour gnocchi: 

Ingredients: 

  • 4 tablespoons of coconut flour
  • 3 flax eggs (3 tablespoons of ground flaxseed and 9 tablespoons of water) 
  • 1 teaspoon garlic powder
  • 1/4 teaspoon of salt
  • 1 tablespoon basil
  • 2 teaspoons beetroot powder

Makes 15 gnocchi balls.

Add all dry ingredients to a mixing bowl…. 

 Add flax eggs and mix well until consistency feels like a sticky dough. 

A sticky, well combined PINK dough! 

Then roll mixture into approximately 1/2 inch balls and leave to chill in the fridge for at least an hour ( or more) We left them for 2 hours. 

    

   

Then heat a pan until it begins to boil. When the water is boiling add the little balls of gnocchi in. When they rise to the top (it’ll take about 2 minutes) catch them with a slotted spoon and set aside.

    Serve with salad…

   

And/or add your favourite sauce. We added a homemade blend of tomato and basil 👌🍅

Voila! A delicious nutritious lunch 😋

Vegan Potato Salad

Ingredients:
– Potatoes
– Celery
– Cucumber
– Onions
– Mixed Herbs/Salt & Pepper
– Plamil Organic Mayo

Preparation Time:
10 minutes + (Chilling time if you prefer to eat it cold)

Cooking Time: 30 minutes

Here is our recipe for our favourite side potato salad,
And today we’re sharing with you another recipe ballad.
Peel potatoes, cut into chunks and put to the side…

Cook in your steamer for 30 minutes – take a look inside…

With a tablespoon of water, herbs and seasoning there’s no messing… 😉

Then mix the mixture, give it a whisk and a good shake!
This dressing is really simple and easy to make!
Add a little more water if the consistency is too thick,
You don’t want it lumpy it’ll make you feel sick!

Then pour over the steamed potatoes, that dressing all creamy…
And mix it all up to make a side salad that tastes dreamy… 👌

Lean Clean Cannellini Bean Salad

We’re on a roll so here’s blog post number 2
A quick protein-full salad especially for you!
Just half a bell pepper and a small onion red
And a spoonful of dried parsley or other herb instead.
A quarter of cucumber and some surrounding greens
And don’t forget a large bowl of cannellini beans!

Then chop up the veggies, dice them nice and small
And place all in a bowl and give a good mix to all.
Pour over a little olive oil and the juice of a lime,
And you’ll have the main base in absolutely no time.

Now take some organic spinach, watercress and rocket,
Place it around the edge of a plate leaving a circular pocket.
And spoon the bean mixture right around in the middle,
And voila! A delicious salad that’ll make you as fit as a fiddle!
