Orange Salad Dressing 🍊

Here’s a simple 2 minute Homemade Orange dressing that we made for our salad this afternoon: 

Ingredients:

  • Juice of 1 orange, 
  • 3 tbsps of extra virgin olive oil,
  • Pinch of Maldon salt
  • Orange zest 
  • Ground pepper

Simple, easy and zesty! Free of additives, preservatives and sugar, completely natural and super flavourful!

Why not try with lemon or a grapefruit or even a couple of limes? 

 

Mint, Red Onion, Carrot and Mashed Potato Baked Balls

Ingredients

  • 1 large baking potato (or several little potatoes) 
  • Approximately 6-8 carrots. Though any number would be fine.
  • 3 tsp Dried chopped basil 
  • 1 tbsp Dried chopped mint
  • 3 garlic cloves finely chopped
  • Salt/pepper to taste 
  • Olive Oil (optional)
  • Ice Cream Scoop

 Peel, chop and steam your potatoes and carrots until soft. Ours usually take 30 minutes  

Place your steamed vegetables in a bowl with mint, basil, sliced garlic cloves and salt and pepper.  

Finely dice your red onion…  

Mash together and stir in the onion. Do not use a blender the potatoes will become all gluey!   Then fill an ice cream scoop with the mixture .

  

And place the balls on a baking sheet or oven tray.  

We added a little olive oil for extra crispness however this is optional. You could omit the added oil if using a non-stick tray.    

If you’re placing the balls in a stone pan however it is recommended to use a little oil so the balls do not stick to the bottom of the pan.    

Bake for 20-30 minutes depending on how crispy you like them!

These were in the oven for 30 minutes at 200 degrees. Just until they browned nicely at the edges.

Serve with salad and enjoy!     

 

Homemade Quinoa Flour

Ingredients:

  • 2 cups of Quinoa 
  • Coffee/spice grinder or Vitamix dry jug blender. 

Here’s a little tip for you if you ever run out of quinoa flour:

Simply make your own in a quarter of an hour! 

Here we have located our 5 kilogram queen of quinoa store! 👑

For approximately 3 cups of flour just 2 cups of grain we’ll need to pour. 

 In a skillet toast 2 cups of seed on medium heat until the grains begin to pop. 

Then you want to lightly stir for 2-3 minutes before the toasting can stop.  

Place the grains in your coffee/spice grinder or Vitamix to finely blend…

And in 30 seconds you’ll have quinoa flour to send…  

To your recipes with homemade cheer…

 and next time you run out of flour you’ll have no fear! 

Lettuce Salad Wraps 

Ladies and Gentlemen here’s a delicious idea to give your meal a nutritious start…It’s so wonderfully vibrant it is edible art! 

Ingredients

  • Lettuce head with large leaves. We used Batavia, though Cos could work well too.
  • Julienned or thinly sliced salad vegetables.
  • Salt/pepper to taste
  • Cocktail sticks
  • Favourite dip/sauce (optional)

First wash out your leaves and lay them out flat..

  
Then lay salad items in strips…just like that! 

We used julienned, cucumber, carrot, red onion and pepper too. Though you could add any fillings that you wish to.   

Sprinkle a little salt and pepper for extra spice and roll the green leaf up like a wrap, oh it looks so nice!   

We always find piercing a cocktail stick through the middle helps it to stay, so your delicious crunchy centres don’t unfold away.
Voila! There we go our wraps are ready and complete, ready for a delicious healthy bite to eat 👌 
Here’s another tasty tip…Why not serve our lettuce wraps alongside your favourite  sauce or dip?  

Lemon & Wholegrain Mustard Vinaigrette 🍋

Ladies and Gentlemen here for you and for me, is an appetising, simple salad dressing recipe! 

Perfect for when your lunch is in need of some zest and you would like your salad leaves tasting their best!

Ingredients

  • 4 tablespoons extra virgin olive oil 
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon lemon zest 
  • 1 teaspoon of stevia 
  • 1/2 teaspoon of Daylesford Wholegrain Mustard 
  • 1/4 teaspoon to salt 
  • Freshly ground black pepper to taste 

Getting Zesty! With our Oxo Good Grips Zester  

To an empty glass bottle, Add 1/2 tablespoon of lemon zest…

…2 tablespoons of freshly squeezed lemon juice, which we measured into our most convenient  Joie Lemon Juice Reamer …

  

…Add Salt to taste… (And pepper too)

…and 1/2 of Our favourite teaspoon of mustard…Delicious and wonderful consistency it is from the lovely people at Daylesford – we’d love to visit their farm someday…  

Classic, grainy and tangy it’s perfect for our salad dressing and made with only a few simple organic ingredients 

 Olive oil in our recycled glass jar ready to pour out 4 tablespoons…

And your jar should look something like this! Here is all our ingredients layered in our glass jar before shaking! 

Give all the ingredients a good shake and Voila!     
Pour over your salad and store in the fridge (for up to 3 days)… Enjoy!  

Avocado Pizza Sauce 

If like us you’re crazy about avocados you’ll love this fantastic simple idea of replacing traditional tomato based sauce with an avocado sauce on your pizza! 

Ingredients:

  • 1 Large Avocado
  • 1/4 cup of water 
  • 2 tablespoons olive oil 
  • 1 teaspoon Himalayan pink salt 
  • 1 teaspoon basil 
  • 1 teaspoon oregano 
  • 1 teaspoon thyme 

Take the flesh from 1 large avocado….

      

    2 tablespoons Olive oil   

    1 teaspoon of pink salt…  

    1 teaspoon of oregano…  

    1 teaspoon of basil…  

    1 teaspoon of thyme   

    And place into a jug or mixing bowl…  

    Add water…  

    And stir or blend into a sauce…    

    Then pour onto your pizza base, pictured here is our Flax Flour-Free Base

    Spread evenly…  

      

    And Voila! You’re ready for toppings…

    Spinach… Onions…  
    Red pepper and tomatoes… 
      

    And a sprinkle of hemp seeds…

    Then cook for a further 15 minutes…     

    Enjoy!

    Ground Flax Flour-Free Pizza Base 

     It’s Bank holiday Monday and there is an all round vote for Pizza tonight… Alas! We are out of flour and so this poses a real dilemma in our household this evening…

    Do Not Fear inspiration is here! We happened to find another jar of ground flax seed in the pantry earlier this evening 👌

    Ingredients:

    • 1 and 1/2 Cups ground flaxseed/linseed 
    • 2 teaspoons baking powder
    • 1 teaspoon salt
    • 2 teaspoons oregano
    • 3 tablespoons of oil
    • 3 flax eggs ( 3 tablespoons of flax + 9 tablespoons of water stirred and left to solidify in the fridge for 15 minutes)
    • 1/2 cup water

    Flax seed measured into our mixing bowl….

      

    Add all ingredients… 

      

    See that baking powder beginning to foam! 

      

    Mix all ingredients together and leave to thicken for 5 minutes… 

      

    Roll out mixture onto a silicone tray to desired thickness  

     
    Shaping this pizza fair and SQUARE ☺️😂 ( Well it became more rectangular actually!) then bake for 15-20 minutes 

     

    Et voila! The mixture solidifies and turns a wonderful brown crispy golden colour.

      

    You can see that the base has solidified and begun to rise from the silicone sheet… 

      
    Now to spread our Perfect Pizza Sauce

      

    And apply toppings! First fresh organic leaf spinach…

      

     …and now organic washed broccoli including thinly slicing the stalks…

     

    …finally some sliced organic and washed yellow pepper  

      

    Completed with a sprinkle of salt, ground pepper and mixed herbs 👌

      

    Into the oven for a further 15-20 minutes then your flax crust pizza is complete. 

      

    Red Pepper Hummus – Sesame Seed Free

    Here’s a delicious red pepper hummus recipe, unique indeed because it’s sesame seed free!

     We like our hummus with a texture quite thick, which is why homemade we always pick!

    Ingredients

    • 3 cans or cartons of pre-cooked chick peas
    • 1/2 a red pepper
    • 25ml of fresh lemon juice
    • 1/2 teaspoon cumin
    • 3 garlic cloves. 
    • 1 teaspoon black pepper
    • 1/2 teaspoon of salt
    • 1 tablespoons olive oil
    • 120 ml water 
    • 1 teaspoon salt  

    Have your chick peas ready to go…  

    And measure out your lemon juice ready to flow…

      

    …into the jug with your cumin too…

      

    And half of a red pepper washed right through.

      

    You’ll need to peel and give your garlic cloves a chop…

      

    …and into the jug with the oil you pop….

      

    All of the ingredients into your blend ready to whir! 

        

    And in 30 seconds your hummus is ready to stir!

    Thin Crust Coconut Flour Pizza Base 

    We adore experimenting with new plant based pizza bases! No two pizza bases are ever the same. We can decide upon different thicknesses, different oils, different flours, different seasonings, between crust or no crust  – oh the decisions and choices are splendid! Any excuse to use our imagination!

    This evening (mid-week) we were looking for a quite light and a not very crunchy base (since we are planning crunchy toppings!) 

    Ingredients:
    • 1 1/2 cups of coconut flour
    • 1/2 cup of tapioca flour 
    • 1/2 cup of ground flax or linseed 
    • 3 tablespoons olive oil 
    • Pinch of salt
    • 2 tablespoons basil 
    • 1 cup of warm water

    Add the coconut flour and tapioca flour first and sift through together, we find this really helps to ensure the flours are mixed thoroughly when kneading. Tapioca flour acts rather like a glue that holds everything together – the coconut flour is extremely powdery and not a replacement for ordinary flour. If you don’t have tapioca flour we sometimes use buckwheat instead.

    Add the rest of the ingredients to a mixing bowl and knead well until it forms a dough. 

      

    Then dust your pizza pan with a sprinkle of coconut flour to make sure the bottom doesn’t stick. 

     

     Now don’t worry if the dough is crumbly it won’t be when it bakes! However we find rather than rolling out into a flat dough we can just pour the mixture on top of our pizza pan and mould to the shape of the pan 

    Press down the mixture by pressing lightly with your fingers on the mixture or small rolling pin. 
    Then cook until base is solid and the base begins to crisp at edges – estimately 15-20 minutes.

    Then spread your Perfect Pizza Sauce and simply add your toppings – as you can see below, we chose potato slices, Kale broccoli and onion for tonight’s pizza!

    Beetroot Coconut Flour Gnocchi 

    We used to assume that Gnocchi was always made with potatoes and since converting to a gluten free diet we were determined to find a way to make it without wheat. 

    The great thing about making meals homemade is you actually have to learn about what you’re eating! Before we could make gnocchi however we had to learn exactly what it is! 

    According to Wikipedia Gnocchi are: “various thick, soft dough dumplings that may be made from semolina,[1] ordinary wheat flour,[2]egg,[3] cheese,[4] potato,[5]breadcrumbs,[6] or similar ingredients” 

    Wow, learn something new everyday! We had no idea you could even make gnocchi without potatoes. And so ladies and gentlemen we present to you a recipe for coconut flour gnocchi: 

    Ingredients: 

    • 4 tablespoons of coconut flour
    • 3 flax eggs (3 tablespoons of ground flaxseed and 9 tablespoons of water) 
    • 1 teaspoon garlic powder
    • 1/4 teaspoon of salt
    • 1 tablespoon basil
    • 2 teaspoons beetroot powder

    Makes 15 gnocchi balls.

    Add all dry ingredients to a mixing bowl…. 

     Add flax eggs and mix well until consistency feels like a sticky dough. 

    A sticky, well combined PINK dough! 

    Then roll mixture into approximately 1/2 inch balls and leave to chill in the fridge for at least an hour ( or more) We left them for 2 hours. 

        

       

    Then heat a pan until it begins to boil. When the water is boiling add the little balls of gnocchi in. When they rise to the top (it’ll take about 2 minutes) catch them with a slotted spoon and set aside.

        Serve with salad…

       

    And/or add your favourite sauce. We added a homemade blend of tomato and basil 👌🍅

    Voila! A delicious nutritious lunch 😋
